Freeze Dried Raspberries - Red

A fresh raspberry has about a day in it. That's why we won't courier them — you'd open the box and find jam. Freeze drying is the way round it. The berries go in whole and frozen, the water comes out while they're still frozen, and the structure stays behind. What you get is light, brittle, and shatters on the tongue. They taste more of raspberry than the fresh ones did. Take the water out and what's left is concentrated. Nothing added — no sugar, no preservative, no anything. Our fruit with the water removed. Good on porridge, good in baking because they don't bleed.
