About freeze dried red kiwiberries

We grow kiwiberries in more than one colour. Fresh, the green and red are equally good. Dried, the red stands out. We've put both through the drier and the red is plainly the better one — sweeter, deeper, more like itself. The green comes out fine. The red comes out worth the electricity. Freeze drying pulls the water out while the fruit is still frozen, so the structure stays behind instead of collapsing. They come out light and crisp and go almost as soon as they hit your tongue. Whole fruit, skin and all, exactly as you'd eat it fresh. Nothing added. Note, even though we refer to them as red and green, the colour actually refers to the flesh more so than the skin colour. As they ripen, the flesh can take on a red hue.
