About freeze dried white peaches
From a small block of old white-fleshed trees. Lower in acid than a modern yellow peach and more floral — closer to a nectar than a peach, if you've only had supermarket ones. We pick them properly ripe, which is the whole point and also why they never leave the orchard fresh. They bruise in the crate on the way to the market as it is. Diced and dried, they keep everything except the fragility.
