Freeze Dried White Raspberries

A white raspberry is sweeter than a red and far less sharp — more honey than tartness. People who think they don't like raspberries tend to like these. It's the smallest crop on the orchard and the shortest window, so fresh they're a market-morning-only thing and they go early. Dried is how any of it lasts past February. The colour holds. They come out pale gold and stay that way.
